Crockpot Ravioli Casserole

Tonight, I made a delicious meal that my daughter wouldn’t eat, until we were clearing off the table.  See, my daughter is either a picky eater, or in a rut and I haven’t offered enough variety in the past to where she won’t try anything new.  So as I was clearing off the table and getting ready to throw her uneaten dinner out, she decided she wanted a bite because she wanted to go to Starbucks.  She ended up eating her whole helping and kept saying “Delicious!  I love bowtie pasta now!”  This girl is something else.

Anyway, on to the recipe…I know you are dying to run in the kitchen and make this now!!

Crockpot Ravioli Casserole

1 1/2 lbs. lean ground beef

1 onion, chopped

1 clove garlic, minced

1 (15 oz.) can tomato sauce

1 can stewed tomatoes

1 tsp. oregano

1 tsp. Italian seasoning

salt/pepper

10 oz. frozen spinach, thawed

16 oz. bowtie pasta, cooked

1/2 cup parmesan cheese, shredded

1 1/2 cup mozzarella, shredded

*Brown ground beef with onion and garlic. Put in crock-pot and add sauce, tomatoes and seasonings. Cook for 6-7 hours on low. Add the last 4 ingredients during the last 30 minutes of cooking and turn crock-pot to high. I added the spinach, pasta, parmesan and 1 cup of the mozzarella and I mixed it all up really well. Then I added the last 1/2 cup of mozzarella to melt on the top.

Crockpot Italian Chicken

Crockpot Italian Chicken

I know…I haven’t posted in a while.  We’ve eaten out a few nights and some of the meals I have made, I haven’t been all that impressed with.

But the other night, I fixed a very tasty meal!  I made Crockpot Italian Chicken and it was so yummy and everyone ate it up, even Cheyenne!

So without further ado, here is Crockpot Italian Chicken…

Crockpot Italian Chicken

Recipe from: Chef in Training

2-4 boneless skinless chicken breasts (thawed or frozen will work too.  I used frozen chicken cutlets & they turned out perfect!)

1 pkg. (8 oz) cream cheese, softened

1 can cream of chicken soup

1 pkg. Italian dressing mix

rice or pasta

Place the chicken in the crockpot.

Mix softened cream cheese, cream of chicken soup, and Italian dressing mix together and pour evenly over the chicken.

Cook on high 4-6 hours or until chicken is fully cooked and tender.  I had to turn mine down to low after about 3 1/2 hours because it started bubbling and boiling.

Serve over rice or pasta!

I served peas and Maple Glazed Baby Carrots with this and it was delicious!!

This was so good and the flavor is amazing.  I was so preoccupied with the Maple Glazed Carrots I was making that I forgot to make the rice. This was so delicious, I bet it would taste even better with the rice, but it was still delicious!!  Even Cheyenne loved it and said “This is good chicken, Mommy!”  It just warms my heart when she likes what I fix, eats it and especially when she tells me how good it is!

Ranch House Crock Pot Pork Chops and Parmesan Mashed Potatoes

Man, did I make a good dinner tonight!!  I have to admit that I cheated and used instant potatoes rather than making them per the recipe because I lost track of time and by the time I got in and remembered I needed to peel and cube the potatoes, it would have taken too long to make them, but I do plan on making them next time I make this recipe!  I did however, add to the instant potatoes the garlic and parmesan cheese and it was yummy!! 

Here’s the yummy and extremely simple recipe for the pork chops!!

Ranch House Crock Pot Pork Chops and Parmesan Mashed Potatoes

  • 6 pork chops, 1/2 inch thick
  • 1 packet dry Ranch Dressing Seasoning
  • 10 oz can Cream of Chicken Soup
  • 4 lbs peeled, cubed potatoes
  • 5 Tablespoons real butter
  • 1 cup fresh grated Parmesan cheese
  • 6 cloves roasted garlic (directions are below)
  • 1- 1 1/2 Cups warm milk
  • 1 Tablespoon salt, or to taste
  • 1 teaspoon fresh cracked black pepper, or to taste
Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.
 
Place potatoes into a large pot of cold water. Place onto stove top over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, Parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consistency.
 
Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot.
 
Roasted Garlic
Preheat oven to 350 degrees F. Place bulb of garlic with skins on, wrap lightly in tin foil and bake for 1 hour. Remove from foil and let cool for 15 minutes. Remove garlic from skins, place in a bowl and mash with a fork until completely mashed. Set aside. One garlic bulb will have around 12 cloves.
 
 
NOTE:  Like I said before, I cheated and used instant mashed potatoes rather than making them from scratch as above.  But I did still roast the garlic and put it in my potatoes along with the parmesan cheese.  The potatoes were buttery flavored potatoes, so I didn’t add any more butter, but I guess you could for added flavor.  Here’s how I made my mashed potatoes:
 
Make the roasted garlic as directed above.  Make potatoes as directed on the package.  As they start to thicken, add the mashed garlic cloves (I used 8) and the parmesan cheese (I used 1/2 cup instead of 1 cup because I don’t think the amount my package made was as much as the recipe would have made) and stir until well blended. 
 
This is what you end up with….a delicious meal that will be demolished in minutes!!
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
I made Roasted Parmesan Green Beans to go along with this and everything was absolutely delicious and will definitely be made again!

Crockpot BBQ Chicken

Crockpot BBQ Chicken

I tried another new recipe tonight that was a huge hit!!  I found this recipe for Crockpot BBQ Chicken on Pinterest.  It is super easy and is made in the crockpot…need I say more?

 

 

Crockpot BBQ Chicken

4-6 pieces boneless skinless chicken breasts (i threw them in frozen… even easier!)
1 bottle BBQ sauce (I used Sweet Baby Ray’s!)
1/4 c vinegar
1/4 c brown sugar
1/2 – 1 tsp. garlic powder

Mix BBQ sauce with all ingredients listed under it. Place chicken in the crockpot. Pour the sauce over the chicken and cook on LOW for 4-6 hours.  That’s it…you don’t really even have to stir it, but I do because I like to mix it up and I love how you can smell it all over the house. 

 

 

 

 

 

 

 

 

 

This was definitely a huge hit and will be made often around here.  Even my 2 1/2 year old daughter, Cheyenne, loved it!  She can be kind of picky when it comes to trying new things and things that are fixed differently than she is used to. She ate it all up and asked for more. 

I made Easy Oven Roasted Potatoes and Cheddar Biscuits just like Red Lobster’s.  This dinner was amazing and I hope you get to try it soon!!
